Mozzarella Balls
 
Ingredients:
2½ – 2¾ oz fresh mozzarella, cubed
½ cup freshly grated parmesan cheese
½ tbsp fresh parsley, chopped
1-2 pinches salt
3-4 slices fresh bread, crusts removed and cut into small pieces
1 large egg
2-3 tbsp milk
¼-½ cup bread crumbs
Vegetable oil for frying
Instructions:
In a food processor, blend mozzarella, parmesan, parsley, salt, bread, and egg until combined and slightly sticky.
Form into golf ball-sized balls. Roll in milk, then bread crumbs.
Refrigerate for 30-60 minutes.
Preheat oven to 350°F if baking, or heat oil to 335-345°F if frying.
Bake for 10-15 minutes, turning halfway, or fry until golden brown, about 2-3 minutes. Drain on paper towels.
