Ingredients:
Cookies:
1 cup canned pumpkin puree
1 cup granulated sugar
1/2 cup vegetable oil
1 large egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 teaspoon vanilla extract
Cream Cheese Frosting:
4 ounces cream cheese, softened
2 cups powdered sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
Instructions:
Prepare the Cookies:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the pumpkin puree, sugar, vegetable oil, and egg. Mix until well combined.
In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ginger, and salt.
Dissolve the baking soda in the milk, then add to the pumpkin mixture along with the vanilla extract. Mix well.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Make the Frosting:
In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, beating until smooth and fluffy.
Stir in the vanilla extract until well combined.
Assemble the Cookies:
Once the cookies are completely cooled, spread a generous amount of cream cheese frosting on each one.
Enjoy immediately or store in an airtight container in the refrigerator.
