C is for Cookie Monster Trifle!
This recipe combines a creamy cheesecake filling, a surprise layer of cookie dough, and a crunchy chocolate cookie crust, all colored a vibrant blue for our favorite furry friend. Let's get baking!
Ingredients:
For the Cookie Monster Crumb Crust:
1 ½ cups crushed chocolate sandwich cookies (like Oreos)
¼ cup unsalted butter, melted
For the Creamy Dream Filling:
24 oz (680g) cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup sour cream
For the Hidden Cookie Dough Surprise:
½ cup unsalted butter, softened
½ cup packed light brown sugar
¼ cup granulated sugar
2 tablespoons milk
1 teaspoon vanilla extract
1 cup all-purpose flour
¼ teaspoon salt
1 cup mini chocolate chips
For the Cookie Monster Topping:
Whipped cream
Mini chocolate chip cookies
Blue food coloring gel
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
Make the Cookie Monster Crumb Crust: In a bowl, combine the crushed cookies and melted butter. Press the mixture firmly into the bottom of your prepared baking dish. Bake for 10 minutes and let cool completely.
Whip up the Creamy Dream Filling: Using an electric mixer, beat the softened cream cheese and sugar until smooth and creamy. Beat in the eggs one at a time, then stir in the vanilla extract and sour cream. Pour the filling over the cooled cookie crust.
Bake the Dream: Bake the cheesecake filling for 40-45 minutes, or until the center is just set. Let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
Mix up the Hidden Cookie Dough Surprise: In a bowl, cream together the softened butter, brown sugar, and granulated sugar. Beat in the milk and vanilla extract. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, then stir in the mini chocolate chips.
Once the cheesecake filling is chilled, spread the cookie dough batter evenly over the top.
Dollop it up! Decorate your trifle with generous dollops of whipped cream and mini chocolate chip cookies.
Turn it Cookie Monster Blue! Add a few drops of blue food coloring gel to a small amount of whipped cream and mix until desired shade is reached. Pipe swirls of blue whipped cream around the edge of the trifle for a fun Cookie Monster touch!
