Purple Velvet Cake
Ingredients:
Cake:
2⅛ cups all-purpose flour
¼ cup unsweetened cocoa
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
8 tbsp unsalted butter, softened
1½ cups granulated sugar
2 eggs, room temperature
1 tsp vanilla extract
1 cup buttermilk
1 tsp white vinegar
Food coloring (optional, for purple)
Frosting:
8 oz white chocolate
12 oz cream cheese, softened
6 oz unsalted butter, softened
1 tsp vanilla extract
Food coloring (optional, for purple)
Instructions:
Preheat oven to 350°F. Grease and line two 9-inch round cake pans, dust with cocoa powder.
Sift flour, cocoa, baking powder, baking soda, and salt into a bowl.
Beat butter until light, then add sugar and beat until fluffy.
Add eggs one at a time, then vanilla.
Add buttermilk, vinegar, and food coloring to the wet mixture, then alternate adding dry ingredients.
Pour batter into pans, bake for 25 minutes. Cool completely.
For frosting, melt white chocolate, cool, then mix with cream cheese, butter, and vanilla.
