These Banana Fritters are a delightful treat that combines the sweetness of ripe bananas with a light, fluffy batter. Perfectly fried until golden brown and topped with a delicious cinnamon glaze, they make for an irresistible snack or dessert.
Ingredients :
2 eggs (at room temperature)
2/3 cup milk (at room temperature)
1 tablespoon unsalted butter (melted)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3 ripe bananas (chopped)
Vegetable oil (for frying)
2 cups powdered sugar
1/3 cup milk
1/2 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
Directions :
Step 1: Prepare the Batter In a medium mixing bowl, whisk together eggs, milk, melted butter, and vanilla extract until well combined. Set aside.
Step 2: Mix Dry Ingredients In a large mixing bowl, combine flour, brown sugar, baking powder, cinnamon, and salt. Pour the wet ingredients into the dry ingredients and mix until just combined.
Step 3: Add Bananas Fold chopped bananas into the batter until evenly distributed.
Step 4: Heat Oil Place a large pot over medium-high heat. Add enough vegetable oil to reach 2 inches depth in the pot. Heat the oil to 350 degrees F (175 degrees C).
Step 5: Fry the Fritters Using a small cookie scoop or tablespoon, carefully drop 3-4 scoops of fritter dough into the hot oil. Fry for 4-5 minutes, flipping occasionally, until the fritters are golden brown on all sides.
Step 6: Drain and Cool Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined tray to drain excess oil. Repeat until all the batter is used.
Step 7: Make the Glaze Once the fritters have cooled, prepare the glaze by whisking together powdered sugar, milk, vanilla extract, and ground cinnamon in a medium mixing bowl until smooth.
Step 8: Glaze the Fritters Dip each cooled fritter into the glaze, ensuring it’s fully coated. Place glazed fritters on a wire rack set over a baking sheet to let any excess glaze drip off.
