No-Bake Raspberry Cheesecake Bites
Ingredients:
For the Crust:
1 cup graham cracker crumbs
2 tablespoons granulated sugar
1/4 cup unsalted butter, melted
For the Filling:
8 ounces cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 cup fresh raspberries, mashed
For the Topping:
1/2 cup fresh raspberries
Powdered sugar, for dusting
Directions:
Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are fully coated.
Press the mixture into the bottom of mini muffin cups or silicone molds to form the crust. Refrigerate while preparing the filling.
Prepare the Filling:
In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until fully combined.
Fold in the mashed raspberries until evenly distributed.
Spoon the filling over the crusts in the mini muffin cups or silicone molds, smoothing the tops with a spatula.
Refrigerate for at least 2 hours, or until set.
Topping:
Before serving, top each cheesecake bite with a fresh raspberry and dust with powdered sugar.
