Snickerdoodle Cookie Bars
Cinnamon-Sugar Blondie Squares
Ingredients:
For the bars:
2 3/4 cups all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
2 tsp vanilla extract
For the topping:
1/4 cup granulated sugar
2 tsp ground cinnamon
Directions:
Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
In a medium bowl, whisk together flour, cream of tartar, baking soda, and salt.
In a large bowl, cream together butter and 1 1/2 cups sugar until light and fluffy.
Beat in eggs one at a time, then stir in vanilla extract.
Gradually mix in the dry ingredients until just combined.
Press the dough evenly into the prepared pan.
In a small bowl, mix 1/4 cup sugar and cinnamon for the topping.
Sprinkle the cinnamon-sugar mixture evenly over the top of the dough.
Bake for 25-30 minutes, until the edges are lightly golden and a toothpick inserted in the center comes out clean.
Allow to cool completely in the pan before cutting into bars.
