Churro Cheesecake Cookies
Ingredients:
For the Dough:
1 cup unsalted butter, softened 🧈
1 cup granulated sugar
2 large eggs 🥚
1 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt 🧂
For the Cheesecake Filling:
8 oz cream cheese, softened 🧀
1/4 cup granulated sugar
1 tsp vanilla extract
For the Cinnamon Sugar Coating:
1 cup granulated sugar
1 tbsp ground cinnamon
For the Caramel Sauce (optional):
1 cup caramel sauce
Instructions:
1️⃣ Prepare the Dough: Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla. Mix in flour, baking powder, and salt until combined. 🍪
2️⃣ Prepare the Cheesecake Filling: Beat cream cheese, sugar, and vanilla until smooth. Transfer to a piping bag. 🍥
3️⃣ Shape the Cookies: Preheat oven to 350°F (175°C). Shape dough into disks, fill with cheesecake filling, and form into balls. 🟡
4️⃣ Coat the Cookies: Roll each cookie in a cinnamon-sugar mixture. 🍪
5️⃣ Bake the Cookies: Bake for 12-15 minutes until golden brown. Cool on a wire rack. ⏲️
6️⃣ Serve: Drizzle with caramel sauce if desired. Enjoy! 🍯
